Simple Chicken Soup Tutorial www.thatswhatieat.comYour grandma was pretty smart, you know. She somehow knew that the best thing to feed you when you were sick was a nourishing bowl of chicken soup. It is, of course, one of the many great uses for your simple slow cooker chicken stock, which is a big reason why this soup is so good for you! Nothing beats all those wonderful minerals, gelatin, and other goodness that is in homemade chicken stock. This is the slow cooker I have and love, using it sometimes up to 7 times a week!

I made this quick video to show you how simple it is to have delicious homemade soup. I love to make a big batch and then freeze any leftovers in lunch size portions for later.

Ingredients
  • 1 large onion, chopped
  • 4-5 carrots, peeled and chopped
  • 4-5 celery stalks, peeled and chopped
  • 2-4 tablespoons butter or olive oil
  • 1-2 teaspoons salt
  • Freshly cracked pepper
  • Any other veggies you would like to throw in (mushrooms, green beans, zucchini, etc.), chopped
  • 1 clove garlic, minced
  • 1 tablespoon ground sage (or other seasonings, whatever sounds good to you)
  • 1 cup precooked chicken
  • 2 cups precooked rice or pasta
  • 6-8 cups chicken stock/broth
Instructions
  1. In a large pan, melt butter or heat olive oil.
  2. Add onion, celery, and carrots. Season with salt and pepper and cook until starting to soften.
  3. Add garlic and other veggies. Season with ground sage or other seasonings and cook until starting to soften.
  4. Add in chicken and cooked rice or pasta.
  5. Add enough chicken stock to cover everything.
  6. Cook on medium high heat until the stock is heated through and all the veggies are cooked.
